Tiburon’s Transformations

Tiburon Grill – located in the Tiburon hotel on the San Francisco Bay – will not only be changing its name to Tiburon Tavern, but also its food.  On June 4, the new restaurant will stop serving its Californian cuisine and instead be offering its customers “elevated comfort cuisine,” focusing on a “farm-to-table design.”  But the restaurant’s fans need not fear that the standards will drop since chef Jamie Prouten who has been working at the restaurant over the last year and gained quite a following since then, will continue in his role.

Share; Solo and Dessert

The way it will work is like this: entrée’s will be categorized into two types of plates: share and solo.  Prouten will be getting his ingredients from local vendors including: Mary’s Chicken, Coke Farm and Lucky Dog Ranch.  Diners can thus choose to share a platter for $9 of Coke Farm beets, beet puree, Flambeau radishes, grapefruit, wild arugula, and Pt. Reyes bleu cheese, or a solo plate, such as the $15 Stewart Ranch bacon cheeseburger with fries, or the $16 seared Scottish salmon with Manila clams in cream.  But it’s advisable to leave room for dessert such as the PB&J ice cream sandwich of peanut butter cookies or funnel cake topped in caramelized pineapple and coconut sorbet.

Prouten’s Plot

It is Prouten’s wish that his customers will be privy to an “approachable, local cuisine with a neighborhood feel and wallet-friendly prices.”  He has given the restaurant a completely new work, instilling a gastropub vibe, pairing each dish with a special wine or craft brew.  As well, he is going to put in a self-service bar with many beers on tap and Napa Technology dispensers.  He wants to “provide a sensory experience that’s synonymous with the ever-evolving food culture of northern California.”

This is quite perfect given the restaurant’s setting.  The hotel sits at the tip of the scenic Tiburon Peninsula on the San Francisco Bay, boasting a 103-room California Craftsman-style upscale hotel near Sausalito, amidst three beautiful acres. Close to golf courses, the Stinson Beach, Muir Woods, Angel Island, Point Reyes, Mount Tamalpais State Park and more, once the diner has enjoyed their food with Prouten, it’s time to take a bit of an adventure and to explore the bay just a little bit  more. With great food, superb wine and perfect setting, what more could one want for their San Francisco leisure time?
